Release 2.08 - Barley Wine Barrel-Aged Danish Bøurbon Whiskey (4.y.o)

Four years in ex-bourbon casks, then a six-month finish in a Warpigs barley wine barrel — a corn-rye mash whiskey given a second act.

On the nose: dark caramel, subtle smoke, toffee and a light, pastry-like sweetness where the barley wine’s taken the bourbon wood’s vanilla and honey and shook it up.

On the palate: dried fruit — prune, fig — and toasted cereal notes, with the rye cutting straight through the barley wine’s sticky sweetness so it never gets syrupy.

Finish: full-bodied, velvety, dark oak and leather, the alcohol burn at 45% smoothed into something nodding at old sherry or tawny port.
